Yes belly. Almost killed me. I braised it in beer, mirin, ginger and stuff for 5h. Followed a recipe that said to dice it up and fry it in oil. Yummy I thought but they exploded. Oil everywhere but angels protected my pretty face. Just 1st degree burns on my wrist. Tasty ramen though.

I feel your pain.
At one point in my career I had a chicken fried chicken liver dish coming off my station, and all those livers swelling in the hot oil and bursting, showering me in hot oil ( we wore t-shirts for our uniform rather than chef coats which would protect you from that sort of shit). I was covered in grease burns up to the elbows. I looked like I was covered in track marks and definitely was treated as if I was in more than one situation

Damn! I’ve only gotten slight oil spatters on my arms and that’s enough for me.

@ViolentMeals & @proskynesis - So, what causes this explosion when frying? Just excess water/moisture reacting in the hot oil?

Battle scars make for good stories and all, but I think I’m gonna try and avoid them!

Yes probably moisture + I know the pigskin ”pops” in hot oil. Not that much experience in frying stuff. Probably shouldnt work with hot oil when supertired and in a rush because my lady got a hangry voice haha

I saw someone from sauté station (I’m a restaurant guy, but beverage director/FOH) have a hot ass corn kernel jump out of the pan straight into his eyeball once. Shriek’d in pain and dropped to the floor. He was fine thankfully, but damn that had to hurt.

I tend to forget it a lot, but when I’m frying I try and remember to use one of those splatter screen things. I still make a royal mess when frying but it helps and maybe stops most of the painful “ka-boom psshhhh!” as @ViolentMeals says.

as a pastry chef, i saw someon lose a hand in a hobart. that wasnt a fun day at all.

I had to google “Hobart kitchen tool”. Jesus. Looks like medieval torture implements.

A hobart machine is dangerous if you don’t respect it. I think that the older ones don’t stop until you press the red button. I don’t remember the one we had at the pizza restaurant having any emergency stop feature, but it was already old in the pre y2k era, and I’d imagine that modern ones are more safety oriented.

Oh yeah… big time. I joke about “That must have cost a lot of dough” with Hobart injuries, but gat-damn… that machine would mangle you in a second.
