As the title says, what’s the best/easiest way to achieve this?
Edit: I just picked up a FGDP-30 and wanted to sample it through some guitar pedals. The FGDP has only a stereo out on mini jack. The pedal only a mono input.

I believe that the Zoom MS-70 CDR pedal converts input stereo signals to mono output if you do not apply any effects to the signal.
Radial Engineering StageBug6 can sum stereo to mono or double mono to stereo, as you like it. Plus it handles any issues with impedance and balanced vs unbalanced signals.
I use this cable a lot. It truly sums the signal to mono. I use a 6.5mm adapter on the stereo end when needed.
If you don’t really have a super nuanced stereo image or hard L hard R sounds, you can also just only use the L or R channel and treat it as mono.
