Ok, I can rename patterns and projects but where do I go to rename individual tracks so I know what they are when I look at the mixer?

i don’t think you can rename individual tracks, just the pattern itself.
the only way i know what my midi tracks are by their SRC/midi channel…and then for the samps, i just have to listen to them or look at the samp name to know what it is.
Ahhhh dang! Old habit in the studio die hard! I’m so used to labeling all my work and tracks. Guess I can just put some electrical tape on the table below and use a Sharpie

I think being able to rename tracks is a pretty basic function that should be available.
Think of it like an encryption method. Cowbell = bass line, Bass drum = xylophone loop, snare drum = side stick, Low tom = sad cat sound, Hi tom = hello.wav
It’ll help prevent your tracks from being hacked.
As much as I like the idea of my tunes being ‘encrypted’, my sad cat programming isn’t sufficiently magnificent to warrant being hacked.
(I can never get the tuning right, no matter how much I adjust the furry pitch lever)
