I read that the octatrack can send 4 midi notes per step. How would one play a 5th 6th or 7th chord on a synth module?

You could use 2 tracks sending to the same midi channel
You only need 4 notes for a 7th chord e.g.
+3 +7 +10 gives you a m7th of your root
You can always drop the +10 and have it “implied” then use the extra note to extend to 9ths:
+3 +7 +14(or +2) gives you an madd9 of your root
It’s also possible to drop the +7 (perfect fifth) and have that implied too.
Experiment with these formulae before faffing around with two channels and see if you get the rich chords you need. You can get 6th chords and mM chords easily with one track.
OK, that explanation was a little technical for me. If you could tell me what you mean by +3 +7 +10 I would be grateful. However, I do feel more confident that the machine can do what I need. So thanks 
You specify one note (if step recording) and the parameter locks (+3 etc) define semitone intervals to the next notes around the root
If you record in realtime the four notes may get a different (unexpected) root (depends on the first detected note of your chord) but it’ll sound right
e.g. You specify C2 and +2 so you get C2 D2 played
