Korg’s KingKorg Neo might count. I don’t care much for the keybed though.
The System-8 is this, and plenty knobby, though it has some strange limitations (no AT, one LFO). It sounds great, though.
+1 this a great little box. The companion app/webapp for the Colbalt8m though, brings sound design on it to a whole other level.
I know this isn’t technically virtual analogue , but the Korg minilogue XD desktop, is basically 1 knob per function, with an interresting oscillator section with effects.
If money is no option and you can find one. Nord Lead 4R is probably best in class.

I would also say: To fully explore Peak’s chameleonic qualities, sometimes turn off the onboard fx and use the synth with external fx, pedals or whatever.
The onboard reverb is beautiful but has a very specific character. Use a different reverb, and Peak can assume different disguises …
