I’m controlling my Digitone from an external sequencer (MPC Live). I have a Kik drum sound on Track 1. Is it possible to make this sound non-chromatic so whatever midi note I send to the Digitone (on the midi channel that track 1 is assigned to), it will always play the kick at the same pitch?

Yes, set pitch tracking to zero in the note settings, in the menu where you can also set up velocity mod etc.
