Latency Overbridge Input vs Audio Input

The Digitakt is set to Overbridge mode. In Ableton, each track appears in two different ways: as a Track Input like if it was a Sound Card input (previously configured as so in Audio Routing), and as a VST input.

When recording the same Digitakt track in these two different ways, the Overbridge’s VST Input has no latency whereas the Audio Input does. Also, the Audio Input has more gain than the VST Input.

I am confused, why does every track appear in these two manners?
Can I record the “Audio Routed” with no latency? I’m interested in recording each channel as Mono, and this can only be achieved with Audio Routing.
