The Evolver is one of my favorite all time synths (I’ve had the desktop, the poly, and am currently rolling with my favorite of the line, the mek). The whole package goes places nothing else will but it is a very unique voice that maybe wouldn’t fill the need for a bread and butter analog mono. You’ve got to strip away most of the fun bits (the delays, the output hack, the digital oscillators, distortions, etc) to get in that typical subtractive synth range and I’d say it’s filter in that context isn’t as interesting as other machines. The mopho is basically the evolver without all of the digital bits and a sub osc instead of two digital osc.
The Typhon effect and modulation sections can get it in to Evolver territory but I do think it’s vcos and filter sound are better for traditional subtractive mono sounds. I don’t own one currently but I recall that the mod section could get a little overwhelming trying to deconstruct a preset or return to patch.
All that being said, you’ve got a pretty heavy mix of digital gear already for some of the crunchy nastiness an evolver would bring to the table (DN, ST, and Hydra). Also, the OB6 in Mono always sounds great to my ears. The NYX, Hades, or Erebus are all really solid voices with knobbier interfaces than the Typhon or the evolver and they all would give you a nice core subtractive analog sound.
