I had the same idea about sampling Quake 1 sounds into the rytm but the steam version is Windows only and I don’t really have any windows machines anymore

You should be able to find some program to extract the pak files within the folder of the game. There you can find all the sounds! The pak files behave pretty much like a zip folder, you can try this program: PakExplorer | Valve Developer Union
If you’re on Mac, you could try to run it with wine.
