Seems like an issue with ot itself.
Is the SansDisk Extreme PRO 64GB overkill for the OT (160mb) vs. the Regular Extreme (120mb)?

The Extreme is just fine. OT isn’t going to take any advantage of the difference.
And no difference when transferring files if you have the OT mounted to a computer, because both exceed the speed of USB 2.0.
You’d only see faster speeds with a USB 3.0 card reader in the computer. And they’re slightly faster, at that.
I have, among others, both of the cards you mention.
Here’s a speed test for both, using a USB 3.0 card reader.
Extreme Pro (160MB/1066x)
vs
Extreme (120MB/800x)
FWIW, using OT’s card reader (USB 2.0), you’re looking at about 30-35MB/sec read and write, for both cards.
