Many tracks have several concurrent melodies. Just grab a random pop song on the radio and you’ll likely hear a bass line (that’s a melody) a singer, often singing a different melody, and some other instruments, playing harmonies or combinations of harmonies and melodies. Sometimes songs are written with counter-melodies too, which is really fun because the melodies can somewhat blend into a texture of sorts.

I don’t think you have to stick to a single melody, but there’s also nothing wrong with doing that in my opinion.
