Sounds like the filter is your main issue, why not stick with the minilogue and buy a filter for it?

It is a true analogue stereo filter with 24db/octave.
A great synth and my first instinct as a recommendation - but if their primary driver is a 24db filter then it’s just more of what they already have. You can use the second VCO slot as a multifilter which has a 24db option but it’s a bit limitting if that’s what you’re really after.
Under 500 is a narrow market but there are a number of module based options in that price range - but you’re going to hit up against menu diving in most of the examples I can think of and many of the ones already suggested. A tactile interface, with a 24db filter, for under 500 doesn’t leave many options, even second hand.
For your actual requirements:
Behringer Deepmind is probably the only option that really comes to mind for me, and it sounds fantastic.
Someone else already mentioned the Sequential Fourm - I personally think that 4 voices is a little limited but you can probably get a used one for 500 if you’re lucky!
Another thing I just remembered: before I got a Tonverk I was looking seriously at the Roland SH-4d. I’m starting to get interested in it again as a compliment to the Tonverk. It’s a digital 4-part multitimbral synth with 13 oscillator types. (Originally, 11, they added 2 more in an update.) It also has a dedicated rhythm part, a sequencer, and lots of knobs: no menu diving for ADSR, LFO, filter parameters etc.
It may be the most controversial and immoral recommendation, but any of the Behringer Deepmind’s are tough to beat at the price point.

I’ve had a kind offer from a member here who is looking to sell their Pro-800, so currently that’s the route I’m going down. It has a great sound and is quite a bit cheaper than many other options. It just seems like it will fit my workflow nicely.
I plan to pair it with some sort of FX pedal, though right now I have no idea what.
I bought an M-Vave Pocket Amp for my Soma RoAT. Certain effects are a wee bit noisy but for a battery powered multi effects unit the size of a packet of cigarettes for under £50 its a steal.

the only digital one, u can´t tell the difference while u can bring all the digital advantages home…
meanwhile, elektrons analog 4 mk1 is still a truu best catch on the 2nd hand market…there is, of course quite some menu diving involved, but in combo with stepsequencing and swedish parameter locking on all the fly, defenitly worth some menu diving…

This is a decent match for sure. If you don’t mind using the extra 4 tracks as MIDI, then it maps almost perfectly to the 4x synths (I often find myself using maybe 2-3) of the SH-4D. You bypass the Roland sequencer which means you need to load the same project on both and then you’re set. Personally, I’ve used it as a sound module, with the TV sequencing drums and sampled instruments internally, with some classic synths on SH-4D. SH-4D menus are a bit of a thing to get used to, but by using TV for sequencing it’s mainly about turning SH-4D on and using it as an extra 4 tracks.
And it’s four part multi-timbral with separate mono outputs per timbre! There’s little-to-no effects as such (just a filter distortion switch and MIDI delay), but its clean sound makes it very accommodating for your own outboard FX. Stacking the timbres through a mixer and adjusting the pan of each part can make for some immense sounds, more than making up for the limited modulation/LFO typical of Nords. The four part Nord Wave 2 is a spiritual successor of the 2X in this regard…
From scanning Reverb, the 2x will probably be over £500 for you though, although you should always keep an eye out for locally-advertised deals. There’s always some guy with a new baby on the way selling off gear like this, in my experience…

Roland Alpha Juno might get you there, but without a programmer, it is menu divey for sure. It has 24db filter, 6 voice, solid wave selection and the on board chorus is solid! I still have my AJ1 but sold my Minilogue XD long ago. It’s an underrated gem in my opinion.
Fourm seems an ideal choice, and not too expensive!
