I am thinking about getting one to sequence 5 external synths. Is it possible to sequence my external synths and still stream 8 tracks ? Or one takes place from the other ?

Yes. The 8 MIDI sequencer tracks run in parallel to the 8 audio tracks.

On OT you have 8 tracks for playing samples + 8 tracks for driving MIDI.
You may need some kind of USB hub though…
