It’s pretty good! I could’ve been more aggressive with the seasoning though, but I’m pleased with the results. It’s my favorite way to cook - going into it with zero notion of what I’m going to make, start looking in the fridge, and just going for it. It’s really similar to the feeling of musical improvisation. I suspect you know the feeling well…

The humble American pancake, served up with bacon, fried banana, butter and maple syrup.
I make ours with false buttermilk…basically 1 tbsp of lemon for each cup of milk.
Whisk together dry mix in a large bowl:
1-1/2 cups flour
2-1/2 tbsp sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
For the wet mix:
Make 1-1/2 cups false buttermilk (1-1/2 tbsp lemon juice, fill the rest with higher fat milk). Let sit for 10 minutes.
Melt 3 tbsp butter in a large bowl
Whisk in 2 eggs until just beaten
Combine with buttermilk and stir until evenly mixed
Pour wet mix over dry and mix together without overdoing it.
Lightly butter a thick-bottomed pan, and off you go.

Even when I lived in a place where I could buy fresh buttermilk (which I do not now), it didn’t last very long in the fridge, and I wasn’t making pancakes, waffles, or muffins every day. Yogurt keeps in the fridge way past its pull date. I mix 1/3 plain yogurt and 2/3 milk together for my buttermilk substitute.
I like both of these buttermilk substitute moves you guys are demonstrating. But oh boy do I love buttermilk.
Remember eating Cream of Wheat?
Hot Cream of Wheat (farina) with raspberry jam and butter melting on it with cold buttermilk poured over it is a breakfast that is basically a dessert. It’s so good.
I haven’t had cream of wheat in years! Growing up it was frequent breakfast in the colder months. I’ll have to get into that this year when the temps drop.
When I buy buttermilk for an upcoming recipe I inevitably have to go out and buy a second one because I drank the first one. I love that stuff.
The best snack is hot crispy cornbread with lots of butter, a slice of Vidalia onion, and a cold glass of full fat buttermilk (none of that reduced fat crap for me).
