Thanks! They’re deviled eggs. The yolk filling had kewpie mayo, a little Dijon mustard, and a splash of tobasco. After filling the eggs, I dusted them with smoked paprika and tucked a slices of pickled jalapeño in there. Then I put an anchovy on each and topped them with fresh chives. Delish!

Thank you! Kewpie mayo! I’ve been converted. Don’t me wrong. I still have Duke’s around. But I also have plenty of Kewpie on hand too.

Pickled jalapenos is a nice touch. And anchovies is very daring. I love anchovies but I don’t think anybody else in my circle would go near them. Maybe I’ll just get a bit crazy and make my own personal batch of Steel’s deviled eggs sometime soon.

I am a bit concerned about the “aftermath” of ingesting these beauties though. I’ll have to make them one weekend when I have the house to myself.

I suggest putting the anchovy under the yolk filling. People will eat them and love them, then you disclose that they contain anchovies. You may win some converts…

Beautiful. Hope y’all enjoyed it. Do they not put an apple in piggy’s mouth in Hawaii? For some reason that used to placate the more sensitive types at our family cookouts. Guess they thought it looked cute or happy or something.

ive worked with a bunch of american pitmasters that do whole hog, but asians/polynesians really do something special with pig

I need more whole hog back in my life. The last one was ten year ago. Just the cheer joy on drinking some beers while roast the hog for hours and hours.

My first (and only, so far) whole pig that I cooked. My ex-gf and I catered her sisters friends wedding on Orcas Island. The relationship was doomed, but the catering event nearly caused a breakup. Cooking for 130 people with two folks and a massively uneven division of labor will do that I suppose…
