Are we only allowed to save one project at a time. Or does “ALL” mean all projects are saved?

Yes. ALL DATA SYSEX SEND sends the current contents of the MD’s memory (except for MDUW samples).

If you want to back up other Snapshots from the +Drive, you need to load and back up one at a time.
